Recipes

Indulge in British food during the Fortnight! Seek out in-season fruits and vegetables, quality British meat and some of our country’s fabulous cheeses and dairy produce when you are out shopping and use these to create delicious meals at home. What about trying some of our most traditional dishes, such as Shepherd’s Pie or Apple Crumble, and giving them a modern twist?!

If you have children, consider involving them in the preparation of the meal – British Food Fortnight is a great opportunity to teach them a few cooking skills as well as an appreciation of the pleasures and health benefits of eating good food.

Beef Medallions Marinated in Henderson's Relish Print Email

Serve with Black Pudding Won Tons & Stir fry Vegetables

Recipe kindly supplied by The Regional Food Group for Yorkshire and Humber, member Andrew Gabbitas, Food for Thought.

Ingredients

250 grm beef fillet

For the marinade
200 ml Henderson 's relish
1 lemon grass, outer leaves removed, chopped inner stalk
1 clove garlic, crushed
1 lime leaf, torn
Small thumb fresh ginger, chopped

For the won tons
v 8 wonton wrappers
50 grm black pudding, chopped
20 grm raisins

Vegetables for stir frying (dependant on season)
Oil for deep-frying
eggwash

Method

Mix all ingredients for marinade & cover beef for 1 ½ hours

Mix together raisins & black pudding until paste is formed, fill wonton wrappers, brush with eggwash & seal.

Finely slice vegetables for stir fry

Pat dry beef to remove excess marinade & fry in a hot pan to your preference & leave to rest in a warm place.

Stir fry vegetables until al dente

Deep fry wontons until golden

Reduce marinade by 1/3

To Serve

Place fillet in centre of plate; arrange wontons around beef, place stir fry vegetables on top of beef & drizzle with reduced marinade.
