Recipe from World Cancer Research Fund: www.wcrf-uk.org Ingredients (serves 4) - 1 medium onion
- 2 medium carrots
- 1tbsp vegetable oil
- 400g (14 oz) extra lean beef mince
- Freshly ground black pepper
- 150g (6oz) mushrooms
- 250g (9 oz) frozen peas
- 750g (1lb 10 oz) potatoes, boiled or mashed
Method - Peel and chop the onion and carrot, and fry in the oil for a new minutes.
- Add the mince and cook, stirring, until brown.
- Season to taste with pepper, then add the mushrooms and frozen peas, and cook just until the peas are defrosted.
- Put in an ovenproof dish and pile on the mashed potato, texturing the top with a fork.
- Bake for 30-45 minutes or until brown in a preheated oven at 200ºC/400ºF/Gas 6
