Recipes

Indulge in British food during the Fortnight! Seek out in-season fruits and vegetables, quality British meat and some of our country’s fabulous cheeses and dairy produce when you are out shopping and use these to create delicious meals at home. What about trying some of our most traditional dishes, such as Shepherd’s Pie or Apple Crumble, and giving them a modern twist?!

If you have children, consider involving them in the preparation of the meal – British Food Fortnight is a great opportunity to teach them a few cooking skills as well as an appreciation of the pleasures and health benefits of eating good food.

Salad of Spiced Gloucestershire Old Spot Print Email

Serves 4

Recipe supplied by Heart of England Fine Foods.

Ingredients
2 fillets of Gloucester Old Spot from Happy Meats (1lb total)
½ red chilli
1 clove garlic
1 lemongrass
½ “ ginger
1/2tsp soy sauce
salt & pepper
oil
curly endive
lambs lettuce
1 red apple
1 celery stick
12 x ½ walnuts
¼ pt Essential Cuisine Oils vinaigrette dressing
1tbsp chopped parsley
½ bunch tarragon
salt & pepper

Method
Seal and colour the outsides of the pork in the oil and leave to cool

Chop spices together, add salt and mix with soy sauce

Smear over fillets of pork and wrap tightly in Clingfilm, put in fridge for 12 hours

When ready to use roast in oven 220 c for 10-12 minutes

Meanwhile cut apple and celery into batons, mix together and break walnuts into the mixture

Tear endive into mixture add lambs lettuce, season and add 2tbsp vinaigrette

Strip tarragon and mix in salad

Slice pork and lay in circle round outside of plate

Mix salad and lay in middle of plate

Dribble the rest of vinaigrette mixed with chopped parsley round outside and over meat, serve
